SWEET POTATO GNOCCHI

INGREDIENTS

1kg sweet potato boiled, drained and mashed

150-200 gr whole wheat flour

Salt and pepper

METHOD

Mix all the ingredients and knead for 15 minutes to form a dough.

Form 2cm thick cylinders with the dough and leave them in the fridge for 20 minutes.

To make the gnocchi, cut the cylinders into small sections with a floured knife.

Put the gnocchi on a plate with flour and shape them to make balls, pressing the edge with a fork.

Cook in boiling water for three minutes.
