LENTIL BURGERS

INGREDIENTS

200g cooked lentils

A glass of cooking water

A handful of chopped parsley (with stem)

2 tablespoons smoked paprika and cumin

1/2 cup wholemeal flour

2 cloves of chopped garlic

METHOD

Mash the lentils with a fork until it resembles a puree. In a large bowl mix all ingredients except the flour. If it is too dry, add a little of the hot cooking water, and if it is very soft add some flour.

With the mixture, form balls with your hands that can be lifted and turned over. Roll them in flour until they keep their shape. Cook them in the oven until they become crispy on the outside.

Serve them with whole grain bread, lettuce, tomato and our carrot mayonnaise!
