1 pumpkin cut into squares
A bowl or can of red beans or lentils
3 cloves of garlic
3 tablespoons cumin
A handful of parsley or fresh herbs
Cook the onion, carrot and pumpkin with a little oil for 15 minutes.
Add the parsley stems, cumin, garlic and zest and juice of the lemon.
Add 1ltr of boiled water.
Cook all 20 minutes more.
When the pumpkin is soft, purify it and serve with the leaves of parsley and lentils on top.
Add cream or coconut milk if you want it to have a creamier flavour.
