INGREDIENTS
500g cooked white beans
1 can of tomatoes
3 chopped red onions
2 large courgettes
1 red pepper
1 bunch of spinach
fresh herbs
4 cloves of garlic
2 lemons
Smoked paprika
MeThOD
Cook the onions until they have softened, and add the courgette and pepper
Add the tomato, beans, half a cup of water and 2 spoons of wine or balsamic vinegar
Cook for 20 minutes and, at the end, add the spinach and a handful of fresh herbs
You can serve the stew with a simple pesto made of parsley, garlic, lemon and smoked paprika, to add a dash of green and vitality!
